Weight gain is a function of carbohydrates and fat. If you consume enough carbohydrates to fuel your body then your body will preferentially store some of the fat in that meal as sugar is more easily accessible.
So, if you are eating rice and raw salmon and nori, that’s great because it’s mostly carbohydrates and protein. Once there is mayonnaise or cream cheese in that roll though the nutritional landscape changes from neutral to very counterproductive.
